Portugal’s syllabus of Câmara Cascudo’s History of Food in Brazil
Resumo
The study of Câmara Cascudo’s History of Food in Brazil lead to our
understanding of Portugal’s weight on the formation of a Brazilian cuisine, when it
comes to both culinary techniques and content of ingredients. The author, a scholar
from Natal—a town in the State of Rio Grande do Norte in Brazil—wrote History
of Food in Brazil in 1960, a time of military dictatorship in Brazil and Salazar’s
regime in Portugal. In a way, the fact that both countries went through a similar
political context during those years brought former-colony and former-empire
closer together. This article proposes to analyze Cascudo’s reflections in regards to
the cultural connection that Portugal-Brazil shared, making use of the one hundred
pages he wrote about this theme in many of his studies about food culture. This
study also analyzes historical sources that enabled the relationship between the two
countries, and brings in a myriad of references that have contributed to our thesis
statement. Following Cascudo’s standpoint, we encountered a few core influences
that shaped Brazilian food culture, like the opposition between sweet and savory
dishes, and also the birth of Brazilian staples like the arroz-doce and the feijoada.
Investigando a obra História da Alimentação no Brasil de Luís da Câmara
Cascudo, pensador de Natal, cidade do Rio Grande do Norte brasileiro, constatamos
a relevância da contribuição portuguesa na formação da cozinha nacional, tanto no
que se refere às técnicas quanto aos ingredientes. Lançada no contexto da década
de 1960, essa obra se contextualiza no período da Ditadura Militar brasileira e no
governo de Salazar em Portugal, o que de algum modo viabiliza a aproximação entre
a ex-colônia e a ex-metrópole. No presente artigo, propomo-nos a fazer uma análise
das considerações de Cascudo sobre a ponte cultural Portugal–Brasil, tendo em vista as
100 páginas dedicadas a essa temática em sua história alimentar. Elencamos as fontes
históricas que possibilitaram esse dialogo, assim como as influências que poderiam
ter contribuído no encaminhamento das interpretações dela. Constatamos algumas
contribuições centrais da cultura alimentar brasileira segundo a perspectiva de Cascudo,
como a dicotomia doce e salgado e pratos nacionais como o arroz-doce e a feijoada.
